Ingredients:

For marinating the beef:

  • 500g beef, cut into small cubes
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • Salt to taste

For cooking the rice:

  • 2 cups basmati rice, soaked for 30 minutes
  • 4 cups water
  • 2 bay leaves
  • 4-5 whole cloves
  • 4-5 whole green cardamom pods
  • 1 cinnamon stick
  • Salt to taste

For assembling:

  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 2-3 green chilies, chopped (optional)
  • 1/4 cup chopped fresh coriander leaves (cilantro)
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup fried onions (for garnish)
  • Ghee or vegetable oil for cooking

Instructions:

  1. Marinate the beef: In a large bowl, mix together yogurt, ginger-garlic paste, chili powder, turmeric powder, ground coriander, and salt. Add the beef cubes and coat them well with the marinade. Cover and refrigerate for at least 1 hour, or preferably overnight.

  2. Cook the rice: In a large pot, bring water to a boil. Add soaked basmati rice, bay leaves, cloves, cardamom pods, cinnamon stick, and salt. Cook the rice until it's about 70-80% done. Drain the rice and set aside.
